It was an inevitability that came about in the process of translating the two food cultures, English and Okinawan.

The starting point was England's fish culture.

The inspiration for the Zakzak Fish comes from the long-standing English culture of fish cuisine, which places more value on how the fish is wrapped and chewed than on the fish itself. BEK brings this perspective to the very different context of the taco.

Okinawa's climate has evolved a "crunchy texture".

In the Okinawan environment, fried food becomes heavy with a little oil and humidity. Therefore, BEK pursued a “crunchy structure” that would not fall apart over time. The thickness of the batter, the way it is aerated, and even the way it cracks when you bite into it were all designed to create a fish that meets Okinawan specifications.

The batter of the zakzaky fish is not meant to add flavor. It is there as a "device" to make the sound produced at the moment of biting, the feeling of the fish bouncing off your teeth, and the tenderness of the fish that follows. It exists as a "device" to make these a series of experiences.
