At BEK, we serve tacos, but that is not our ultimate goal. What kind of time do we want to create and what kind of place do we want to be? We have chosen the taco format as a result of our initial direction. This order makes BEK different from other restaurants.

What does it mean to use Okinawa as a starting point?

The phrase "From Okinawa to the World" does not indicate a point of arrival. It expresses an attitude of being born in Okinawa and opening outward from there. It is rooted in the local community while at the same time incorporating outside perspectives. This concept is the base of our cuisine and space.

BEK is rooted in Okinawan chanpuru culture. However, we do not express this as a culinary name or decoration, but rather incorporate it as the overall idea of the space. Different elements mix naturally, and the expression changes from day to day. We consider this state itself to be a good thing.

At BEK, we consider not only the food, but also the tempo of the serving and the atmosphere of the space at the same time. We aim for a state in which the entire experience moves at the same speed, rather than any one thing sticking out. This makes the meal more memorable as a single event.
